Vegan Lemon Icebox Pie

This flavor is inspired by a classic no-bake summer dessert that delivers the most refreshing sweet & tart combo with every bite! 

We start with our vegan ice cream base made with cashews, coconut cream, sugar, salt & sunflower oil. To this, we add the perfect amount of lemon juice to give it a delightful citrusy *zing*. 

Our pastry chef, Maggie, bakes up loads of vegan shortbread crust that we chop up and sprinkle in for a rich & buttery crunch! Finally, we add a swirl of bright and tangy vegan lemon curd that packs a sweet lemon flavor into each bite.
